Dobos Torte
makes one 6″ square cake, serving about 9

Sponge cake batter:
6 large eggs, at room temperature
1 1/3 cups (150 g) powdered sugar, sifted
1 teaspoon pure vanilla extract
1 cup + 2 tablespoons (130 g) cake flour, sifted
pinch of salt

Chocolate Buttercream:
4 oz bittersweet chocolate, finely chopped
1 1/2 cups (3 sticks) unsalted butter
2 tablespoons cocoa powder, Dutch-processed
1 1/4 cups (125 g) powdered sugar
1 teaspoon vanilla extract

Caramel:
3/4 cup sugar
3 tablespoons water
2 teaspoons fresh lemon juice
